Can I “go back” to my previous status after changing to H-1B?

Not automatically. When you complete a change of status to H-1B inside the United States, your previous status normally ceases to be valid as soon as the change is approved and takes effect. There is no undo button that restores your old visa status.

If you later want to return to that previous status, you will need to start a new process, meeting all the requirements of the intended visa again. This can be more complex than it seems, because you would have to demonstrate that you still qualify under those conditions, which is not always the case after changes in your personal or professional life.
