A tourist visa is a nonimmigrant visa: the person wants to visit and return home. As a result, the conversation tends to be shorter and centers on convincing the officer that the trip is temporary and that ties to the home country will bring the traveler back.

The EB-1 is an immigrant visa: the goal is permanent residence. The logic is reversed, and the interview tends to be more detailed, focused on your eligibility for the category. During it, the officer typically:
